
If I spend enough time in an air-conditioned car on a hot summer’s day, I start craving soup and stew. It is a case of climate-control sending the appetite out of control. Appetite is seasonal, too. As soon as we feel the sun on our heads, the food we want is lighter, less rich and often greener. A baked potato is not an ideal summer supper dish; a new potato salad with herbs and chive flowers is just right. But cooking with a light touch on the quantity does not mean ditching the creativity. While it’s true that summer vegetables are loveliest eaten in their purest form, such as green beans with melted butter, try your hand at some artistry. |
