On New Year's Day, I attended a brunch at a friend's place in Greenpoint. She had made a fantastic spinach salad that I enjoyed tremendously. I asked her for all the ingredients so I could make it and blog it. Here you go- Ingredients (for 4 servings):
Directions (this seriously could not possibly be any easier!):
The only points in this recipe come from the Pignolis. According to eTools, they are 1.5 points per tablespoon. The way I prepared it above, I used 4 tablespoons (1/4 cup = 5 points according to eTools). Because that math is inconsistent (points do that sometimes), I would portion this out into 4 servings and call it 1 point per serving. |
