Ingredients :
- 2 small zucchini, sliced into 1/2-inch half-moons
- 1 pint grape tomatoes
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon salt
- Pepper to taste
- 8 ounces whole-wheat penne pasta or other medium-size pasta
- 1/2 cup raisins
- 1 cup cubed feta cheese
- 2 cloves garlic, finely chopped, for the dressing
- 1 teaspoon dried oregano, for the dressing
- 1/2 teaspoon Dijon mustard, for the dressing
- 3 tablespoons red wine vinegar, for the dressing
- 1 teaspoon salt
- Pepper to taste, for the dressing
- 1/3 cup extra-virgin olive oil, for the dressing
Directions :
1. Preheat oven to 400 degrees F. Line a baking pan with parchment paper or aluminum foil. In a medium bowl, stir together the zucchini, tomatoes, olive oil, salt and pepper. Transfer veggies to the tray and roast for 30 minutes, stirring once or twice.
