Cooking without gluten, and the lack of decent recipes, is clearly occupying a number of you. My biggest postbag always arrives after publishing a gluten-free recipe. Yet the books on the topic are often drearily clinical and many of the ready-made products seem to be one step up from hospital food.

Gluten is found in wheat (including spelt), rye and barley, and causes coeliac disease, an auto-immune reaction in the gut that severely restricts its ability to absorb nutrients and causes unpleasant and potentially serious symptoms.
